custom_margin=&#8221;||55px||false|false&#8221; global_colors_info=&#8221;{}&#8221; theme_builder_area=&#8221;post_content&#8221;]<\/p>\n<p>Malm\u00f6 Food Council (MFC) vill etablera och utveckla FN:s och FAO:s initiativ Sustainable Gastronomy Week (SGW) p\u00e5 S\u00f6dersl\u00e4tt under 2025. Projektets \u00f6vergripande m\u00e5l \u00e4r att skapa en \u00e5rlig, regionalt omfattande aktivitet som fr\u00e4mjar regenerativa, cirkul\u00e4ra och socialt h\u00e5llbara id\u00e9er inom gastronomi. M\u00e5let \u00e4r \u00e4ven att s\u00e4nka tr\u00f6skeln f\u00f6r att fler engagerar sig i h\u00e5llbarhetsarbete genom att visa p\u00e5 konkreta och inspirerande exempel utifr\u00e5n de globala m\u00e5len. Ett genomf\u00f6rande av SGW skulle \u00f6ka medvetenheten och synligg\u00f6ra gastronomins omfattande roll och p\u00e5verkan p\u00e5 v\u00e5ra samh\u00e4llen. N\u00e5got som skulle bidra till en snabbare omst\u00e4llning mot ett h\u00e5llbart och transparent matsystem, samt initiera och st\u00e4rka v\u00e4rdeskapande processer som p\u00e5g\u00e5r b\u00e5de f\u00f6re, under och efter SGW. Sustainable Gastronomy Week \u00e4r ett globalt initiativ fr\u00e5n FN:s livsmedelsorganisation (FAO). Syftet f\u00f6r SGW \u00e4r att \u00f6ka medvetenheten om h\u00e5llbarhetsfr\u00e5gor inom gastronomin och belysa hur akt\u00f6rer inom hela livsmedelskedjan &#8211; fr\u00e5n jord till bord tillbaka till jord &#8211; kan arbeta med h\u00e5llbarhet i praktiken. Detta innefattar allt fr\u00e5n vilka r\u00e5varor som anv\u00e4nds och k\u00f6ps in, aff\u00e4rsmodeller, arbetsvillkor, energifr\u00e5gor, hantering av matsvinn och m\u00f6tet med kunden f\u00f6r att n\u00e4mna n\u00e5gra. Projektet kommer p\u00e5g\u00e5 under 18 m\u00e5nader d\u00e4r huvudfokus \u00e4r att h\u00e5lla en Sustainable Gastronomy Week \u00e5r 2025, f\u00f6r att d\u00e4refter vidareutveckla konceptet och skapa ett \u00e5terkommande event.<\/p>\n<p>Med fokus p\u00e5 \u00f6kad, st\u00e4rkt identitet f\u00f6r S\u00f6dersl\u00e4tts gastronomi; samverkan mellan gastronomins eldsj\u00e4lar i S\u00f6dersl\u00e4tt och vidareutveckling av den h\u00e5llbara tillv\u00e4xten f\u00f6r den regionala gastronomin, s\u00f6ker vi st\u00f6d f\u00f6r:<\/p>\n<ul>\n<li>Etablera Sustainable Gastronomy Week med avstamp i S\u00f6dersl\u00e4tt \u00e5r 2025<\/li>\n<li>Skapa nya samarbeten, aff\u00e4rer och engagemang inom gastronomin i S\u00f6dersl\u00e4tt<\/li>\n<li>Skapa nya inkluderande arenor f\u00f6r innovation och entrepren\u00f6rskap med fokus p\u00e5 h\u00e5llbar platsutveckling via gastronomin<\/li>\n<\/ul>\n<p>Projektet bidrar till att uppn\u00e5 Leader S\u00f6dersl\u00e4tts utvecklingsstrategi. I f\u00f6rsta hand inom insatsomr\u00e5dena: 1) Innovation, l\u00e4rande och samverkan: Projektet bygger p\u00e5 SGW som \u00e4r nytt f\u00f6r Sverige och kr\u00e4ver omfattande samverkan inom gastronomin p\u00e5 S\u00f6dersl\u00e4tt 4) Attraktiva destinationer: SGW \u00e4r ett st\u00f6djande och utvecklande destinationsinitiativ som fr\u00e4mjar en h\u00e5llbar och attraktiv bes\u00f6ksn\u00e4ring p\u00e5 S\u00f6dersl\u00e4tt 5) Cirkul\u00e4r ekonomi och delningsekonomi: Hela SGW bygger p\u00e5 h\u00e5llbarhet och s\u00e4rskilt det cirkul\u00e4ra och regenerativa d\u00e4r fokus blir ett kretsloppst\u00e4nk f\u00f6r gastronomin &#8211; fr\u00e5n jord till bord tillbaks till jord. Sekund\u00e4rt s\u00e5 tangerar projektet \u00e4ven de andra insatsomr\u00e5dena d\u00e5 vi avser att knyta kontakter och bygga samverkan mellan t.ex. Malm\u00f6 restaurangskola och Nils Holgerssons naturbruksgymnasium med H\u00f6gskolan Kristianstads gastronomiprogram f\u00f6r \u00f6kad delaktighet och inflytande fr\u00e5n unga. H\u00e5llbar natur inklusive vatten och framtidens jordbruk \u00e4r ocks\u00e5 sj\u00e4lvklara moment i arbetet med SGW d\u00e5 h\u00e5llbar utveckling genomsyrar allt arbete och utg\u00e5ngspunkten f\u00f6r SGW \u00e4r att st\u00f6dja den lokalt h\u00e5llbara produktionen och konsumtionen. Projektet organiserar sig p\u00e5 f\u00f6ljande vis: Arbetspaket 1: Projektledning Arbetspaket 2: Co-creation-konferens och samverkansr\u00e5d Arbetspaket 3: Sustainable Gastronomy Week\u00a8 Arbetspaket 4: Kommunikation Arbetspaket 5: Utv\u00e4rdering och vidareutveckling V\u00e4lj de l\u00e4n d\u00e4r du ska genomf\u00f6ra investeringen eller etablering,<\/p>\n<p>Syftet f\u00f6r projektet och genomf\u00f6randet av SGW \u00e4r att \u00f6ka medvetenheten om h\u00e5llbarhetsfr\u00e5gor inom gastronomin och belysa hur akt\u00f6rer inom hela livsmedelskedjan &#8211; fr\u00e5n jord till bord tillbaka till jord &#8211; kan arbeta med h\u00e5llbarhet i praktiken. SGW erbjuder en unik plattform f\u00f6r S\u00f6dersl\u00e4tt att ta en ledarroll i den globala diskussionen om h\u00e5llbar gastronomi och vi siktar p\u00e5 att skapa l\u00e5ngsiktig f\u00f6r\u00e4ndring i hur vi producerar och konsumerar mat, fr\u00e5n lokalt till globalt. N\u00e5gra av de nyckelfr\u00e5gor som vi kommer arbeta utifr\u00e5n enligt FAO f\u00f6r att uppn\u00e5 h\u00e5llbarhetsm\u00e5l inom gastronomin \u00e4r: 1. St\u00f6tta lokal prim\u00e4rproduktion och f\u00f6r\u00e4dling 2. Prova lokalt f\u00f6rankrad traditionell mat 3. H\u00e5lla de kulinariska traditionerna levande 4.
